Mashed Potato Candy - cooking recipe

Ingredients
    1 potato (size of an egg)
    1/2 c. peanut butter
    1 lb. 10x sugar
Preparation
    Cook potato with peeling until tender.
    Peel, mash and mix with sugar, less 4 tablespoons.
    Roll out with this remaining sugar on pastry sheet.
    (You may need more 10x sugar.)
    Spread with peanut butter; roll and slice.
    A little food coloring can be used for different holiday colors.
