Chicken Creole - cooking recipe

Ingredients
    1 chicken
    1/2 c. oil
    3 Tbsp. flour
    1 bunch green onions
    1 can tomato paste
    2 bell peppers
    2 tsp. salt
    2 tsp. pepper
Preparation
    Boil chicken. Save stock. Debone chicken. Make a roux. Add onions, bell pepper and tomato paste. Stir 10 minutes over medium heat. Add 2 cups chicken stock and 1 cup water. Add salt and pepper. Add chicken and cook slowly for 30 minutes. Serve over rice. Serves 8 to 10.
