Dry Bean Soup - cooking recipe

Ingredients
    2 1/2 lb. ham bone
    4 qt. cold water
    1 large onion
    1 tsp. pepper
    1 Tbsp. dried celery leaves
    2 c. beans, soaked overnight
    2 carrots (medium-sized), diced
    3 large potatoes
Preparation
    Put ham bone, pepper and water in a large pot.
    Add beans and cook slowly for 2 hours.
    Add onion, carrots and celery leaves. Cook slowly for 1 hour.
    Add potatoes.
    When potatoes are done, soup is ready to serve.
    (Dry or split peas may be used instead of beans.)
