*Moussaka 2 - cooking recipe
Ingredients

3 medium eggplant (1 lb. each)
1 1/2 lb. chopped meat
2 chopped onions
1/2 stick butter or margarine
1 can tomato paste
1/2 c. red wine
2 Tbsp. parsley
1 tsp. salt
salt and pepper
1/2 c. grated cheese
Preparation

Saute onions in butter. Add chopped meat.
Saute until red is gone. Add tomato paste, seasonings and wine. When well sauteed and moisture is absorbed, add grated cheese and mix.
Pare eggplant vertically in 4 long strips. Slice in 1/4-inch slices (circles). Salt and place in a colander to drain. Pat and place on paper towels. Saute briefly in lightly oiled pan.
Place on paper towels.
