Fresh Water Fish - cooking recipe

Ingredients
    4 filleted bass (12-inch minimum)
    1 c. self-rising flour
    1 tsp. baking powder
    salt
    pepper
    1 egg, beaten
    frying fat oil
Preparation
    Mix flour, baking powder, salt and pepper into a smooth paste. Add egg.
    In a heavy iron skillet, heat enough fat to half fill skillet.
    Fat is at proper temperature when a drop of batter forms a ball.
    Dip fish in batter and drop in fat.
    Turn to even cooking and cook 7 to 8 minutes, until batter coating is golden brown. Remove and put in paper lined pan in warm oven.
    Serve with hush puppies.
