North Dakota Wheatberry Salad - cooking recipe
Ingredients

1 1/2 c. uncooked wheatberries (seed; untreated)
8 oz. cream cheese
12 oz. Cool Whip
15 oz. crushed pineapple
1/2 c. chopped walnuts
2 small pkg. dry vanilla pudding
Preparation

Cook wheat in water until soft (1 to 2 hours).
Drain and cool.
Combine cheese and pudding.
Stir in drained pineapple. Add enough juice only to thicken pudding batter.
Fold in Cool Whip, nuts and wheatberries.
Chill.
