Shanghai Duck - cooking recipe

Ingredients
    8 scallions, cut into 2-inch lengths
    2 slices ginger root (size of a half dollar)
    1 c. dark soy sauce (low sodium)
    1 c. water
    2 star anise (16 sections)
    1 duck (4 to 5 lb.)
    1 c. light soy sauce (low sodium)
    1/4 c. sugar or substitute
Preparation
    Place the scallions, star anise and ginger root in a large pot or pan.
    Place duck, breast side up.
    In separate bowl, mix remaining ingredients and pour over the duck.
    Cover and bring to a boil.
    Simmer on low heat for 2 to 2 1/2 hours or until tender; turn every hour.
    Cut in small pieces and serve hot.
    Serves 6.
