Hawaiian Meatballs - cooking recipe

1 lb. ground turkey or chicken
1/2 c. finely chopped onion
6 Tbsp. bread crumbs
1 egg
1 tsp. salt
1/2 tsp. ginger
1/4 tsp. garlic powder
1 Tbsp. dried parsley
2 Tbsp. vegetable oil
1/4 c. chopped green bell pepper
1/4 c. chopped red bell pepper
1 c. mushrooms, sliced
2 c. canned pineapple tidbits (no sugar added), drained and reserve juice
2 tsp. packed brown sugar
1 1/2 tsp. soy sauce
4 tsp. cornstarch
3 Tbsp. vinegar
1/4 c. water
2 c. cooked long grain rice
Preparation

Mix first 8 ingredients and shape into 1-inch meatballs. Brown meatballs in vegetable oil.
Add green and red peppers and mushrooms.
Cook until vegetables are semi-tender; add pineapple. In separate bowl, mix 1/2 cup reserved pineapple juice with brown sugar, soy sauce, cornstarch, vinegar and water.
Pour over meatballs and vegetables.
Cook until thickened.
Divide portions equally and serve each over 1/2 cup cooked rice.
