Cuban-Style Black Beans - cooking recipe

Ingredients
    2 yellow onions, diced
    2 or 3 cloves garlic, minced
    1 red bell pepper, chopped
    2 (15 oz.) cans black beans, drained and rinsed (I use Progresso)
    1 1/2 (14.5 oz.) cans chicken stock (I use low sodium)
    1 tsp. ground cumin
    2 tsp. dried oregano
    2 bay leaves
    1 Tbsp. fresh lemon juice
    1/4 c. cilantro, roughly chopped
    3 to 4 c. cooked rice (yellow or saffron)
    1/2 c. Monterey Jack cheese, grated
    1/4 c. low-fat sour cream (optional)
Preparation
    I put onions, garlic and bell pepper in food processor to chop.
