Eggplant Casserole - cooking recipe

Ingredients
    1 large or 2 small eggplants
    2 Tbsp. butter
    2 slices stale bread
    salt
    pepper
    bread crumbs or crackers
    2 eggs
    1/4 lb. cheese
    chopped onion (1)
    1 bell pepper, chopped
Preparation
    Peel and cut up eggplant.
    Add salt and pepper to taste, butter and stale bread slices, slightly dampened.
    Stir in slightly beaten eggs and about 1/4 pound cheese, cut in cubes. Add chopped onion and bell pepper.
    Pour into a casserole, cover with bread crumbs or crushed crackers.
    Dot with butter and bake for 1/2 hour at 375\u00b0.
