Squash Casserole - cooking recipe
Ingredients

5 to 6 yellow squash
3 Tbsp. pimento
3 Tbsp. onion
3 Tbsp. melted butter
salt and pepper
1 c. diced medium sharp cheese
1 c. cracker crumbs
2 eggs, well beaten
1 c. milk, scalded
Preparation

Cook squash until tender.
Mash with fork (need 2 cups). Preheat oven to 350\u00b0.
Combine squash, cheese, pimento, onion and cracker crumbs.
Mix well.
Heat milk to boiling, allow to cool slightly, then stir into mixture.
Pour in buttered casserole dish.
Bake 1 hour at 350\u00b0.
