Baked Potato Casserole - cooking recipe

Ingredients
    6 medium potatoes
    1/4 c. butter
    1/3 c. chopped onion
    1/4 tsp. pepper
    2 c. grated Velveeta cheese
    1/2 to 1 c. sour cream
    1 tsp. salt
    2 Tbsp. butter
    paprika
Preparation
    Grate potatoes coarsely in medium bowl after they have been boiled in jackets and peeled.
    Set aside.
    In saucepan, over low heat, combine cheese and 1/4 cup of butter until almost melted. Remove from heat and blend in sour cream, onion, salt and pepper. Fold in potatoes and turn into a greased casserole dish.
    Dot with butter and sprinkle on paprika for color. Bake in a preheated 350\u00b0 oven for 30 minutes.
