Potato Cheese Soup - cooking recipe
Ingredients

4 c. sliced potatoes
2 c. water or vegetable stock
2 tsp. salt
1 small onion, diced
1 Tbsp. vegetable oil
garlic powder
fresh parsley
3 c. milk
1 c. grated cheese
2 Tbsp. margarine or butter
1/4 tsp. pepper
6 to 7 slices bacon, cooked and crumbled
Preparation

Cook potatoes in water with salt until done.
Drain and save water. Saute onion in oil.
In blender, place potatoes, water, onion and parsley; blend until smooth.
Place mixture in pot, add milk. Stirring continuously, add cheese, butter and seasonings.
Heat until cheese is melted.
DO NOT BOIL.
Garnish with crumbled bacon when serving.
Thin with additional stock if necessary and adjust seasonings.
Heat slowly after adding the cheese or it will curdle.
