Gringo Bean Casserole - cooking recipe

Ingredients
    1 large onion, chopped
    1 stalk celery, chopped
    1/2 stick butter
    1 (10 oz.) can tomatoes and green chilies
    4 servings cooked rice
    salt to taste
    pepper to taste
    1 medium bell pepper, seeded and chopped
    2 (16 oz. each) cans red kidney beans, packed in chili sauce
    1 c. grated (4 oz. solid) American or Monterey Jack cheese
Preparation
    In a Dutch oven or heavy casserole, saute bell peppers, onions and celery in butter until soft.
    Then add the tomatoes and beans; cook over low heat for 45 minutes, stirring now and then to avoid sticking.
    Finally, stir in the grated cheese, salt and pepper to taste.
    Cover and bake in a 300\u00b0 oven for about 1 hour.
    Serve hot over cooked rice.
