Groundhog Smothered In Onions - cooking recipe

Ingredients
    1 groundhog carcass
    2 c. diced onions
    slices onions to cover meat when in pot
    1 garlic clove, sliced very thin
    1/4 lb. fatback
    flour
    salt
    pepper
    1/4 tsp. oregano
    1/4 tsp. thyme
    1 bay leaf
    2 chili pods
Preparation
    Cut into chunks about 2 to 3 inches long. Cook in pressure cooker until tender, 10 to 12 minutes.
    Fillet by removing the meat from the ribs using a paring knife to push the meat from the bones.
    Dredge in seasoned flour to which has been added salt, pepper and a pinch of each of the following herbs:
    marjoram, rosemary and savory.
    Brown in hot fat.
    Serve with turnips, mustard or wild greens, dry beans (navy, pinto or red kidney) and corn bread.
