Luscious Lemon Pie - cooking recipe
Ingredients

1 1/4 c. sugar
3 Tbsp. cornstarch
2 c. boiling water
2 Tbsp. grated lemon rind
1 Tbsp. margarine
3 egg whites
3 Tbsp. flour
1/8 tsp. salt
3 egg yolks
1/3 c. fresh lemon juice
1 (9-inch) pie shell, baked
6 Tbsp. sugar
Preparation

Combine 1 1/4 cups sugar, flour, cornstarch and salt in double boiler; gradually stir in water.
Cook until thick.
Beat egg yolks; add rind, juice and butter.
Add cooked mixture slowly and return to double boiler.
Cook 5 more minutes.
Cool slightly and pour into baked pie shell.
Beat egg whites until stiff; gradually add 6 tablespoons sugar.
Continue to beat until glossy.
Pile on top of cooled filling.
Bake at 325\u00b0 for 20 to 25 minutes until lightly brown.
