Hot Water Corn Bread - cooking recipe

Ingredients
    2 c. yellow corn meal
    1 tsp. salt
    1 Tbsp. Crisco or bacon drippings
    2 c. boiling water
    1/2 tsp. baking powder
    2 Tbsp. cold water
Preparation
    Mix corn meal and salt thoroughly.
    Then add 2 cups boiling water into which 1 tablespoon shortening has been added.
    \"Scald\" is the key word.
    The boiling water into the meal is a cooking process which produces a firm mound of dough.
    Cool about 20 minutes.
    Work into dough 1/2 teaspoon baking powder dissolved in 2 tablespoons cold water.
    Pat dough into patties about 3/4-inch thick.
    Fry in deep fat until brown.
    Serve hot.
    This recipe has been in \"The Shaw\" family for over 75 years.
