Ingredients

2 sticks margarine
2 c. light brown sugar
4 eggs
2 c. milk
2 c. grated sweet potatoes
2 c. strained persimmons
1 grated coconut or 1 c. coconut
2 1/2 c. flour
1/2 tsp. salt
4 tsp. baking powder
1/4 tsp. soda
1 tsp. cinnamon
1 tsp. cloves
1/2 lb. raisins
Preparation

Mix margarine and sugar.
Add eggs, beating until well mixed. Sift together dry ingredients and add alternately with milk.
Fold in sweet potatoes, persimmons, coconut and raisins.
Add vanilla. Bake in two 9 x 13-inch greased and floured pans at 350\u00b0 for 50 to 60 minutes.
Serve with whipped cream, if desired.
