Lime Pickles - cooking recipe

Ingredients
    7 lb. cucumbers (medium)
    2 gal. water
    1 c. lime
    2 qt. vinegar
    5 lb. sugar
    3 tsp. salt
    1 tsp. celery seed
    1 Tbsp. mixed pickling spices
Preparation
    Don't peel cucumbers.
    Slice 1/4-inch thick.
    Soak 24 hours in 2 gallons of water and lime.
    Wash thoroughly and let stand 3 hours in cold water.
    Drain and let stand overnight in mixture of remaining ingredients.
    I heat it to boiling before adding to cuke slices, which I have in a plastic pail, if a large amount. In the morning, boil 35 minutes and seal.
    I add some alum if pickles are too soft, while cooking.
    Makes 5 quarts.
