Vegan Colorful Spaghetti(Serves 2) - cooking recipe
Ingredients

1/2 lb. spaghetti or linguini
1/4 c. olive oil
1 clove garlic, minced
1 medium onion, coarsely chopped
2 medium ripe tomatoes, peeled and coarsely chopped
1 lb. fresh spinach, cleaned and torn into pieces
1/4 c. Parmesan cheese, grated (optional)
salt and pepper to taste
Preparation

Cook pasta according to directions on package.
Heat oil in large frying pan and saute garlic and onion over medium heat for 2 minutes or until slightly golden.
Add tomatoes; stir and cook for 3 minutes.
Add spinach; toss with tomato mixture until spinach is just wilted.
Turn off heat.
When pasta finishes cooking, drain, then toss with vegetables over medium heat until coated.
Season with salt and pepper to taste.
Serve hot.
