Flounder With Crab And Spinach Filling - cooking recipe
Ingredients

4 (4 oz. each) flounder, sole or orange roughy fillets
salt and pepper
1 pkg. (10 oz.) frozen chopped spinach, thawed and squeezed dry
4 oz. crab meat, drained
4 tsp. minced onion
3 Tbsp. mayonnaise
2 tsp. Dijon mustard
1/8 tsp. salt
1/8 tsp. pepper
Preparation

Pat fillets dry with paper towels and season lightly with salt and pepper.
Combine remaining ingredients and spread equal amounts of this mixture on each fillet.
Roll up from narrow end in a jelly-roll fashion.
Place fish seam side down in oiled baking dish.
Cover with foil and bake at 375\u00b0 for 13 to 18 minutes or until fish just flakes.
Serves 4.
