Homemade Crushed Pineapple - cooking recipe
Ingredients

1 gal. ground or grated peeled zucchini (do not use seeds)
2 c. sugar
3/4 tsp. salt (optional)
1 (46 oz.) can pineapple juice
1 tsp. pineapple extract
1 1/2 c. lemon juice (ReaLemon okay)
Preparation

Combine all ingredients and simmer 20 minutes, or until it looks somewhat transparent.
Makes 8 pints.
Cool and freeze. Tastes like crushed pineapple!
Use for salads and desserts.
Good in all kinds of Jell-O, especially cherry.
