Oven Fried Vegetable Medley - cooking recipe

Ingredients
    okra
    potatoes
    onions
    eggplant
    squash
    green pepper
    green tomatoes
    corn meal
    onion salt
    pepper
    1/4 c. oil
Preparation
    Any combination of these vegetables may be used.
    Slice vegetables or cut in 1-inch pieces.
    For each pound of vegetables, use 1/2 cup corn meal, 1/2 teaspoon onion salt and 1/4 teaspoon pepper.
    Mix dry ingredients and coat vegetables well.
    Heat 1/4 cup oil in baking pan.
    Add coated vegetables and bake at 400\u00b0 until well browned (30 to 45 minutes), stirring occasionally.
