Roasted Peppers And Onions In Olive Oil - cooking recipe

Ingredients
    4 red or yellow bell peppers
    1/2 c. olive oil
    3 small garlic cloves, chopped
    2 pinches dried oregano
    1 Tbsp. chopped fresh parsley
    salt and freshly ground black pepper to taste
Preparation
    Broil the peppers on a broiler pan, at least 4-inches from the heat, turning them often, until the skin is charred and blistered. This will take about 10 minutes.
    Place the peppers in a paper bag until they are cool enough to handle, about 10 more minutes.
