Pickled Chicken(Pescado En Escabeche) - cooking recipe

Ingredients
    1 (3 lb.) ready to cook cut up chicken
    1 Tbsp. salt
    1/2 tsp. pepper
    1 bay leaf
    1 c. olive oil
    4 Tbsp. butter
    1/2 c. sliced onions
    1/2 c. vinegar
Preparation
    Rub the chicken with salt and pepper.
    Brown in the olive oil. Arrange the slices of onions over the chicken and add the butter, bay leaf and vinegar.
    Cover and cook over low heat until chicken is tender.
    Serves 6 to 8.
