Shrimp Gumbo(Club Member: Lee Ann Mcraney) - cooking recipe

Ingredients
    3 to 5 lb. peeled shrimp
    1 can crab meat
    1 to 2 large onions
    1 large clove garlic
    1 c. chopped celery
    dash of oregano
    bay leaf
    1 large can tomatoes
    2 to 3 c. okra, quick browned
    2 bell peppers, chopped
    black pepper to taste
    1 tsp. or more sugar
Preparation
    Saute chopped onions, celery and bell peppers in small amount of oil.
    Boil shrimp as you would to eat; peel.
    Make very brown roux of at least 4 heaping tablespoons flour and necessary oil. Add all vegetables to shrimp.
    Add water as desired.
    Season to taste and simmer for 1 to 2 hours.
    Ham, boiled chicken or smoked sausage may be used instead of shrimp or may be added in addition to shrimp.
