Ripe Tomato Relish - cooking recipe

Ingredients
    1/2 green pepper, seeded and chopped
    2 lb. ripe tomatoes, peeled and chopped
    1/3 c. celery
    1 medium sized onion, chopped
    2 Tbsp. salt
    1/3 c. sugar
    1 1/2 Tbsp. mustard
    3/4 tsp. dry mustard
    2/3 c. cider vinegar
Preparation
    Combine green pepper, tomatoes, celery, onion and salt.
    Let stand at room temperature 24 hours.
    Drain.
    Add sugar, mustard seed, dry mustard and vinegar.
    Let stand another 24 hours. Transfer to freezer containers, cover and refrigerate or freeze.
