Sherried Chicken And Rice - cooking recipe

Ingredients
    2 whole chicken breasts, skinned, halved and boned
    1 Tbsp. oil
    8 oz. fresh sliced mushrooms
    2 c. sliced carrots
    1 1/2 c. sliced onions
    2 Tbsp. parsley flakes
    1/2 tsp. thyme
    1/2 tsp. salt
    1/8 tsp. pepper
    1 c. dry sherry
    1 bay leaf
    1/2 c. uncooked Minute rice
Preparation
    Cut chicken into 3-inch pieces.
    In large skillet or wok, cook chicken in oil until lightly browned.
    Add remaining ingredients, except rice.
    Cover.
    Simmer 20 to 30 minutes or until vegetables are tender.
    Stir in rice.
    Cover and simmer another 5 to 10 minutes or until rice is fluffy.
    Serves 6.
