Dellarosa Rice Pudding - cooking recipe

Ingredients
    2/3 c. uncooked rice
    5 c. milk
    3 eggs, separated
    1 2/3 c. granulated sugar
    1/2 tsp. salt
    1 1/2 tsp. grated lemon rind
    2 1/2 tsp. vanilla extract
    2 Tbsp. butter
    3/4 tsp. nutmeg
Preparation
    Simmer rice in milk 1 1/2 hour until very tender.
    Preheat oven to 325\u00b0.
    Beat egg yolks lightly and add to cooked rice.
    Add 1 1/3 cup sugar and salt, lemon rind, 1 1/2 teaspoon vanilla extract and butter.
    Turn into a buttered 2-quart casserole and sprinkle with nutmeg.
    Set casserole in pan of water (hot) and bake for 2 1/2 to 3 hours until a knife inserted in middle comes out clean.
