Ingredients

6 eggs
1 fresh coconut, grated, or 1 (8 oz.) pkg. (use about 2 c. fresh)
2 Tbsp. butter
1/4 tsp. salt
1/2 tsp. nutmeg
2 c. sugar
3 Tbsp. flour
2 unbaked pie crusts (9-inch)
Preparation

Cream the eggs, sugar, flour and butter.
Add salt, nutmeg and milk.
Stir in 1 cup coconut.
Pour into unbaked pie crusts (makes 2 pies).
Sprinkle remainder of coconut on top.
(Most will sink down, but some will stay at top and get golden brown.)
Bake for 40 minutes at 375\u00b0.
