Fresh Lemon Filling - cooking recipe
Ingredients

1/4 c. sugar
1 Tbsp. grated lemon peel
1/4 c. lemon juice
4 tsp. cornstarch
1/4 tsp. salt
1 Tbsp. butter or margarine
Preparation

In 1-quart saucepan, stir sugar, lemon peel and juice, cornstarch, salt and 1/2 cup water, until blended.
Over medium heat, cook until mixture is very thick and boils briskly, stirring constantly.
Remove from heat and stir in butter.
Cool at room temperature.
(If mixture becomes too thick, stir until of spreading consistency.)
Fills 2 cakes.
