Apple-Kissed Chicken - cooking recipe

Ingredients
    1/2 c. apple juice
    3 Tbsp. apple butter
    1 tsp. lemon rind, grated
    1 Tbsp. Lemon juice
    6 chicken breast halves, skinned
    1/2 tsp. poultry seasoning
    1 small onion, sliced
    Cooking apple- 12 wedges
    1 Tbsp. plus 1 tsp. corn starch
    1 Tbsp. plus 1 tsp. water
    2 Tbsp. walnuts, chopped, toasted
Preparation
    Combine first 4 ingredients in a small bowl.
    Sprinkle chicken with poultry seasoning. Coat a large skillet with cooking spray.
    Place over medium heat.
    Add chicken and cook 5 min. on each side or until browned. Remove chicken; drain on paper towels. Return chicken to skillet.
    Pour apple juice mixture over chicken, top with onion slices.
    Cover, reduce heat and simmer 10 minutes.
    Add apples wedges, cover simmer another 10 min., or until chicken is tender.
    Transfer chicken mixture to serving platter, using a slotted spoon.
    Dissolve cornstarch in water, add to apple juice mixture in skillet, stirring constantly.
    Cook until thickened.
    Spoon sauce over chicken.
    Sprinkle with walnuts.
    Yield: 6 servings.
