Smoked Salmon A La Louis - cooking recipe

Ingredients
    1/4 tsp. garlic powder
    1/4 tsp. black pepper
    1/4 tsp. ginger powder
    2 c. brown sugar
    1 c. Hawaiian salt
    salmon belly or salmon fillet (leave skin on)
Preparation
    Lay salmon in dish, skin side down.
    Mix garlic powder, black pepper and ginger powder; sprinkle on fish.
    Mix brown sugar and salt.
    Sprinkle over fish.
    Leave overnight.
    Put in smoker until fish shine turns dull, approximately 4 to 5 hours, depending on heat.
    You may reheat by broiling.
