Poke Salet You'Ll Love - cooking recipe

Ingredients
    large paper bag 1/2 full poke, stemmed
    10 medium green onions
    3 large eggs
    vegetable oil (for frying)
Preparation
    Boil poke in a large pot with enough water to cover as it boils (but not in excess).
    After boiling approximately 10 minutes, drain off water, the cover with water again. Bring to a boil, then turn off heat. Drain and squeeze excess water from plant.
    (Poke will resemble wet cut grass.)
    In skillet, add about 1/4-inch vegetable oil. Add chopped green onions (including blades).
    Fry until onions are soft and poke begins to soften. Beat 3 eggs in bowl. Add to poke-onion mixture and cook until eggs scramble. Add salt to taste. Serve with fried corn bread, baked beans or your favorites.
