Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1 c. Ritz cracker crumbs
1 Tbsp. oleo
1 onion, chopped fine
1 egg, beaten
1/4 c. milk
1/2 c. diced cheese (optional)
Preparation

Peel and dice eggplant.
Boil 5 minutes.
Drain in colander. Mix all ingredients in a 2-quart casserole dish and bake at 350\u00b0 about 25 or 30 minutes.
