Crawfish Casserole - cooking recipe
Ingredients

2 pkg. Mahatma saffron rice
1 lb. crawfish, boiled and peeled
1/2 c. margarine
1 bell pepper, chopped
3/4 c. celery, chopped
parsley (optional)
1 c. cheese, grated
1 can Ro-Tel tomatoes
1 onion, chopped
1 can cream of mushroom soup
1 tsp. garlic powder
Preparation

Saute bell pepper, celery and onion in oleo.
Combine with tomatoes and steam on low fire, 10 minutes.
Cook rice according to directions.
Place rice and tomato mixture in casserole dish. Mix in soup, garlic and parsley.
Stir in crawfish.
Sprinkle grated cheese over top.
Bake at 325\u00b0 for about 40 minutes or until bubbling.
Don't stir.
Serves 9 to 12.
