Hotel Peabody Vanilla Muffins - cooking recipe

Ingredients
    2 c. sugar
    2 eggs, beaten
    4 c. flour
    1 Tbsp. plus 1 tsp. baking powder
    2 c. milk
    1/2 c. butter, melted
    1 Tbsp. vanilla
Preparation
    Combine sugar and eggs, beating well at medium speed of an electric mixer.
    Combine flour and baking powder.
    Add to sugar mixture alternately with milk, beginning and ending with flour mixture and beating well after each addition.
    Stir in butter and vanilla.
    Spoon into greased muffin cups or cups lined with papers, filling 2/3 full.
    Bake at 400\u00b0 for 20 minutes.
    Remove from pans immediately.
    Yields 3 dozen.
