Chili Cheese Rice Quiche - cooking recipe

Ingredients
    2 large eggs
    1 c. skim milk
    1/4 tsp. garlic salt
    1 c. cooked rice
    4 oz. Mozzarella cheese, shredded
    1/4 c. onion, chopped
    2 Tbsp. pimento, chopped
    1 Tbsp. Parmesan cheese
    jalapeno peppers, chopped, to taste
    pepper to taste
Preparation
    Prepare rice as directed.
    Combine eggs, milk, garlic salt and pepper.
    Stir in rice, Mozzarella cheese, onion, pimento and jalapeno peppers.
    Spoon into an 8-inch pie plate coated with nonstick cooking spray.
    Bake at 350\u00b0 for 30 to 35 minutes or until inserted knife near center comes out clean.
    Sprinkle with Parmesan cheese.
    Let stand for 10 minutes.
    Serve.
    Makes 2 servings.
