Peanut Butter Muffin - cooking recipe

Ingredients
    1/3 c. plus 2 tsp. self-rising flour
    3 Tbsp. chunky peanut butter
    1/4 c. skim milk
    1 egg, beaten
    1 Tbsp. superfine sugar
    1 tsp. melted margarine
Preparation
    Preheat oven to 400\u00b0.
    Sift flour and sugar together.
    Add remaining ingredients. Stir until mildly lumpy.
    Do not overmix. Spray 4 muffin pans with nonstick spray.
    Fill 2/3 full. Partially fill remaining cups with water.
    Bake until golden brown, about 20 minutes.
    Remove to wire rack.
