Family Bean Curd - cooking recipe

Ingredients
    1 tsp. oil
    1 carrot, thinly sliced
    1/2 c. sliced green beans or pea pods
    8 fresh or dried black mushrooms
    1 (12 to 16 oz.) box soft bean curd, cut into 1-inch cubes
    1 Tbsp. light soy sauce
    1/2 c. chicken stock
    1 Tbsp. cornstarch, dissolved in 2 Tbsp. water
    1 green onion, chopped fine
    1/2 tsp. sesame oil
Preparation
    Heat oil in nonstick pan or wok. When oil is very hot, stir-fry carrot, beans and mushrooms 1 minute. Add bean curd, soy sauce and stock and bring to a boil. Thicken with cornstarch. Sprinkle with chopped green onions and remove to serving dish. Drizzle with sesame oil and serve immediately. Makes 1 to 2 servings.
