Ms. Michon L. Crawford'S Apple Butter - cooking recipe

Ingredients
    1 peck apples (good cooking apples, McIntosh or Winesap)
    1 pt. apple cider
    2 1/2 c. sugar
    3 c. brown sugar
    1 Tbsp. cinnamon
    2 cinnamon sticks
    1 tsp. ground cloves
    1 tsp. allspice
    1 tsp. finely ground black pepper
    1 tsp. vanilla
    1 tsp. salt
    juice of 2 medium lemons
    1 c. cinnamon candy
Preparation
    Wash apples, quarter and remove stems and seeds.
    Cook in large stockpot with vinegar and apple cider until soft.
    Put through food mill. Return to stock pot.
    Stir in sugar and all remaining ingredients. Bring to a boil, stirring frequently. Stir until apples thicken. Reduce heat immediately to low.
    To test, place spoonful in saucer to cool.
    If mixture does not run or appear watery, apple butter is done.
    Place in jars which have been sterilized in the oven. Seal as instructed.
