Eggplant Parmigiano - cooking recipe

Ingredients
    1 eggplant
    2 eggs, beaten
    1/4 c. water
    bread crumbs
    1/2 tsp. salt
    tomato sauce
    grated cheese
    Mozzarella cheese slices
Preparation
    Wash and cut eggplant.
    Cut into 1/2 inch slices.
    Heat olive oil in frying pan.
    Dip eggplant in egg and water mixture, then in bread crumbs.
    Place eggplant in frying pan and brown slowly on both sides.
    In a baking dish, put 1 cup tomato sauce, then a layer of fried eggplant, a little sauce, sprinkle some grated cheese.
    Repeat with eggplant, sauce and grated cheese to make 3 layers.
    On top sprinkle with grated cheese, sauce and Mozzarella slices.
    Cover and bake 15 minutes more at 350\u00b0.
