Fresh Apple-Pecan Pound Cake - cooking recipe

3 c. unsifted all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. oil
2 c. granulated sugar
3 large eggs
2 tsp. vanilla
2 c. finely chopped, pared cooking apples (Yellow Delicious, Rome or Granny Smith)
1 c. chopped pecans or walnuts
1/2 c. raisins (optional)
Preparation

Combine flour, baking soda, salt, cinnamon and nutmeg; set aside.
In large bowl with electric mixer, beat together sugar, oil, eggs and vanilla until thoroughly combined.
Gradually beat in flour mixture until smooth.
Fold in apples, pecans and raisins. Turn into greased 10-inch tube pan.
Bake at 325\u00b0 for 1 hour and 15 minutes or until cake tester comes out clean.
Cool on rack for 10 minutes; remove from pan.
