Ginger-Kissed Carrots - cooking recipe

Ingredients
    1 lb. baby carrots, peeled and trimmed
    1 scallion, sliced
    1 Tbsp. olive oil
    1/2 c. orange juice
    1 tsp. soy sauce
    1/4 c. brown sugar
    3/4 tsp. ground ginger
Preparation
    In saucepot over medium-high heat, cook carrots in boiling water 4 minutes or until tender; drain.
    In the meantime, in skillet over medium-high heat, cook scallion in oil 1 minute.
    Add orange juice, soy sauce, brown sugar and ginger; bring to a boil. Add carrots.
    Reduce heat and simmer 5 minutes more or until sauce thickens and carrots are heated through.
    Makes 4 servings.
