Cream Of Broccoli Soup - cooking recipe
Ingredients

2 to 3 large heads broccoli
3 to 4 stalks celery
2 large onions
1 qt. water
3 Tbsp. butter
3 Tbsp. flour
1 pt. milk or more (can use cream)
salt, pepper and hot sauce to taste
chopped green onions
yogurt
Preparation

Chop broccoli, celery and onions coarsely and simmer in large pot with water uncovered for 10 minutes.
Broccoli should be bright green.
Remove from heat.
Melt butter in saucepan.
Add flour and stir over low heat.
Add milk gradually, stirring until smooth.
Simmer 2 to 3 minutes, continuing to stir.
Remove from heat.
Process vegetables and water in blender or food processor in 2 to 3 cup batches until finely chopped, but not quite pureed. Stir into cream sauce.
Heat.
Serve with chopped onions and dollop of yogurt if desired.
