Uncle Albert'S Roasted Chicken - cooking recipe

Ingredients
    1 (3 lb.) fryer or small roasting chicken
    vegetable oil
    1/2 tsp. salt
    1/2 dried bay leaf
Preparation
    Preheat oven to 425\u00b0.
    Remove giblets; trim.
    Cover with water (with bay leaf).
    Simmer until tender; remove chicken and reserve broth for gravy.
    Wash and dry chicken; rub inside with salt.
    Oil outside of bird.
    Insert meat (poultry) thermometer.
    Tuck wings under back (truss legs, if desired).
    Place in a 425\u00b0 oven for 15 minutes.
    Reduce heat to 325\u00b0 and continue to roast for 30 minutes, or until thermometer reaches 185\u00b0.
    Remove from pan to platter; let rest 15 minutes before carving.
    Serve with favorite stuffing (baked separately) and gravy made with pan drippings and giblet broth.
