Quick Light Corn Bread - cooking recipe

Ingredients
    2 c. cornmeal
    1/2 c. flour
    1/2 tsp. soda
    1 tsp. salt
    3/4 c. sugar
    1 tsp. dry yeast
    2 c. buttermilk
    2 to 3 Tbsp. melted shortening
Preparation
    Preheat oven to 375\u00b0 (350\u00b0 if using glass pan).
    Mix and sift together first 5 ingredients.
    Add yeast, buttermilk and shortening for a thin batter.
    Mix lightly.
    Pour into greased loaf pan; bake 55 minutes.
    Cool on rack for 10 minutes.
    Remove from pan.
    Freezes well.
    If self-rising meal and flour are used; omit salt and soda.
