Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red kidney beans
    1/2 lb. smoked sausage, sliced
    1 large onion, chopped
    1 head garlic, minced
    2 bay leaves
    1 to 2 tsp. parsley
    1/2 bell pepper, chopped
    salt and pepper to taste
Preparation
    Wash red beans and soak in water overnight.
    This will make your beans more tender.
    If you don't have the time to soak overnight, that's okay.
    Cook sausage, drain fat and set aside. In heavy pot, put beans and fill pot with water about 1 1/2 inches below top.
    Put all your spices in and sausage and bring to a boil.
    Turn to about medium (needs to be continuous boil).
    As it needs water, add.
    Cook several hours, until beans are tender and juice is thick like a gravy.
    Cook amount of rice you need. Serves 8 to 10.
