Chicken A La Romano - cooking recipe
Ingredients

1 (2 1/2 lb.) chicken, cut up or 8 pieces
1 tsp. salt
1/2 tsp. pepper
pinch of red pepper
1 to 3 cloves garlic, chopped
1/3 c. chopped parsley
1 tsp. oregano (optional)
1 (No. 2) can tomatoes
1/2 to 3/4 c. finely grated Romano cheese
1/4 c. olive oil
Preparation

Place chicken pieces in shallow baking pan.
Place pan in preheated oven at 350\u00b0 for 15 to 20 minutes.
Pour off liquid. Sprinkle with salt, pepper and red pepper.
Mix garlic, parsley and oregano and sprinkle over this.
Cover with canned tomatoes, then grated cheese.
Top with olive oil.
Return to oven and bake 1 to 1 1/2 hours more until tender.
Serve with pasta.
