"Old Army Chili, 1896 - cooking recipe
Ingredients

1 beef steak (round)
1 c. boiling water
2 large dried red chile pods
1 Tbsp. hot drippings
2 Tbsp. rice
1 c. boiling water
flour, salt and onion (optional)
1 1/2 lb. flank steak
4 cloves garlic, crushed
1/4 c. vegetable oil
1 (4 oz.) can Ortega whole green chilies, cut into strips
1 c. water
4 peppercorns
salt to taste
1 medium onion, cut into fine slices
Preparation

Place steaks into a Dutch oven.
Add water, 3 garlic cloves, peppercorns and salt.
Heat until water comes to a boil.
Reduce heat and simmer, covered, until meat is well done (about 1 to 1 1/2 hours).
When meat is done, remove liquid and cool.
When cool enough to handle, pull into shreds with fingers or the tines of 2 forks.
Return the meat to the cooking water.
